Onyx Sauvignon Blanc is a refreshing new discovery from the Darling wine region of South Africa. Darling Cellars is situated on the cool west coast of South Africa, near Darling, about one hour’s drive from Cape Town and about 15km from the Atlantic coast. Darling Cellars sources grapes from about twenty growers located primarily in the premium vineyard of Groenkloof. Abe Beukes, winemaker since 1997, is often heard muttering that these vineyards are the best kept secret in the Cape. The Onyx range is the Jewel of Darling Cellars’ Crown, only the very best selection from the vintage. Onyx is a semi-precious stone that represents the dark granite bedrock so prevalent in the Groenkloof vineyard. The perfect wine gem! Onyx Sauvignon Blanc 2008 was selected as one of 15 Exciting New Wines for less than $20 by Wine Spectator, which rated it 88 points.

Onyx Sauvignon Blanc is pale straw-yellow in color with a bright nose of nettles, passion fruit, green figs, asparagus and traces of gooseberry. The palate displays mineral complexity with a well-rounded balance and a lingering aftertaste. The wine was left on lees for 3 months in stainless steel tanks to add complexity and depth. It is crisp and clean on the long finish.
