Pares Balta Cava Brut is a delightful sparkling wine from the Penedes region in the northeast of Spain, just west of Barcelona. Pares Balta is a family owned winery in the Penedes region with a tradition that goes back to 1790. The vineyards have been certified organic since the 2004 vintage. This Cava is a blend of 58% Parellada, 25% Macabeo and 17% Xarel.lo. According to the importer, Bryce McNamee of rising-star Boutique Wine Collection, the Parellada dominates the blend and contributes to the fresh floral notes, the Macabeo brings the fruit and the Xarel.lo the body to the blend. Pares Balta Cava Brut is soft yellow-green in color with fine bubbles. It has an enticing nose of white peaches, apples, pears, melon and lime. Crisp and bright, dry with medium body, this sparkling wine has rich flavors of apple, honeydew, peach and mineral notes. It is fruit-forward and nicely balanced, with a clean finish of tropical fruits.
