Etna Bianco DOC, Sicily, Italy
Cosentino Alfio Etna Bianco Superiore Vigna Don Paolo is a beautiful white wine gem from the indigenous Sicilian grape, 100% Carricante. The Carricante vineyard for this wine was planted in the late 1800’s--some of the oldest vines on the mountain. This plot is planted in the Caselle area within Milo on the eastern slopes of Etna at an elevation of 800 meters. Family-owned for the past 3 generations and now under the direction of Alfio Cosentino, the current mayor of Milo. Practicing organic farming and sustainability.
In this wine the first thing that stands out is the style of the master oenologist Salvo Foti. In the glass there is a more intense straw yellow, on the nose there are powerful hints of ripe fruit, mown hay, thyme. In the mouth you can perceive the longest maceration on the skins. Fresh and savory, with good persistence and a long finish.
Enjoy Cosentino Alfio Etna Bianco Superiore Vigna Don Paolo with grilled shrimp, swordfish, seafood risotto, and pastas.
