Ciavolich Aries Pecorino Colline Pescaresi IGP is a beautiful food-friendly white wine of 100% Pecorino from Italy’s Abruzzo region. The name of the winery is Ciavolich Azienda Agricola. The Ciavolichs were Bulgarian wool merchants who, in 1500, arrived in Miglianico, where, in 1853, the family constructed their first wine cellar, which is one of the most ancient winemaking buildings in Abruzzo. Today the family winery is owned and run by Chiara Ciavolich and her husband Gianluca. We first met Chiara at our shop in October 2016 and immediately fell in love with her wines!

Entirely hand-harvested, the wines of Ciavolich reflect the time honored, traditional winemaking techniques of Abruzzo. The winery produces only one Pecorino, from one hectare of pergola planted by Chiara’s father in 2000. The boxes of grapes are transported to the cellar in the early hours of the morning. The grapes are gently pressed and the must is then decanted into stainless steel vats and barrels. 50 hl ferment in temperature-controlled stainless steel vats while 24 hl are fermented in 4,600 ltr barrels from 2009. The wine then stays on its fine lees in stainless steel vats and barrels until February. It is then bottled. It is at its best after the summer, and depending on the harvest, it improves in the bottle even after some years.

Herbal scents of rosemary, thyme, sage and peppermint go along with hints of yellow pulp fruit. A high acidity with a sapid and mineral finish enhances the taste. An average of 15,000 bottles are produced.
