For the inaugural release of Contour Cabernet, we have selected the best fruit from vineyards nestled between the Vaca and Howell Mountains on the backside of Napa, the perfect location for slow-ripening cabernet. Our cabernet grapes were hand-picked in the early morning during mid-October before being sorted, destemmed, and crushed in closed-top tanks for fermentation at 80 degrees, resulting in optimal fruit extraction. The wine was racked in barrel for malolactic and aged for ten months in a diverse barrel regimen that includes new (20%), second use (30%) and neutral (50%) French oak from Cavin, Taransaud, François Frères and Remond cooperages.—Contour Wines
