Easton Cabernet Sauvignon is a beautiful estate-bottled Cab from the Shenandoah Valley AVA in the Sierra Foothills of California. Terre Rouge and Easton Wines was founded in the late 80’s by Bill Easton and Jane O’Riordan. Winemaker Bill Easton is one of the original Rhône Rangers and pioneered the Rhône varietals in the Sierra Foothills. His wines are balanced and elegant with complexity that develop as the wines age in bottle. The French call it élevage, which is "raising" the wine in the bottle. There is an art to this style of winemaking and great pleasure in a wine that is ready to drink, while still showing great promise for future aging.
“Our Cabernet Sauvignon is from the Baldinelli Vineyard which was planted in 1972 on St. George rootstock. This is an old, low bearing, small berry/cluster clone. Yields are about 1-1 1/2 tons per acre. Our growing season is longer and cooler than what many might assume. It is comparable in many ways to the Howell Mountain region of the Napa Valley. Red, iron-laden soils of grainy decomposed granite. Aging takes place in 100% French Bordeaux barrels from Taransaud cooperage, 50% brand new each year.”—Bill Easton
